Sun Dried Turkey and Provolone Panini #JennieO


On my constant quest to make healthier fast meals on the week nights, I found Jennie-O* has been quite busy themselves.  Jennie-O now offers many healthy turkey options which are also fast for week night meals.  They offer these fully cooked turkey breast or lunch meats already marninated.  It can be purchased as a large piece or sliced for sandwiches.  I chose the sliced sun-dried tomato turkey breast for these yummy sandwiches.

While making these fast sandwhiches, I kept thinking of more uses for the turkey breast.

These sandwhiches were simple to make.  A couple slices of sun-dried turkey, one slice of provolone, a little jarred sun dried tomato pesto or roasted red peppers, and a little mayo. I put all this on sourdough bread (or the bread of your choice) and warmed it on the panini maker until the cheese was melty!  I thought of adding fresh baby spinach after I had warmed them up but the kids were already asking to eat their sandwhiches, so next time!

The turkey breast could be cut up into chunks and put on skewers with fresh red pepper and cheese pieces for a spring get-together.  Jennie-O offers quiet a few “The Biggest Loser” reccipes which are also yummy!  #Jennieo

If you love southwest food but want something healthy and fast, then this is for you. Light and satisfying.

Serves: 6
  • 1 c cooked rice (room temp or warm)
  • 1 c cooked diced or shredded chicken
  • 1 c black beans 12 oz drained and rinsed*
  • ½ red and/or green bell pepper*
  • ¼ cup of corn*
  • ¼ c fresh cilantro
  • 1 T of chili seasoning
  • garlic salt to taste
  • 2 cups of shredded taco or Mexican blend cheese
  • Sour cream (optional)
  • Lime juice from ½ lime (one good squeeze)
  • 6 burritos (low carb)
  1. Mix everything together except sour cream. Divide into six servings and place down the center of each burrito shell. Roll up shells leaving ends open. Spray tortilla with cooking spray lightly all over.
  2. Heat large nonstick griddle or skillet over medium heat for a minute. Place 1-2 burritos at a time in pan seam side down until golden brown. Flip. About 2 minutes per side. Plate burrito placing a small dallop of sour cream on top of burrito with a sprinkle of cheese and cilantro.
  3. *Instead of using the separate ingredients, I used frozen red bell peppers, corn and black bean (defrosted) which cut the prep time down quite a bit.

This is a delicious cheezy-creamy, kid friendly lunch or dinner. It's sure to be a family pleaser, and you will have requests for it often!
Recipe type: Comfort
Cuisine: American

  • ⅓ c parmesan cheese (shredded)
  • 8 oz velveeta cheese (cubed)
  • 4 oz cream cheese (cubed)
  • ½ c Fat Free Half & Half
  • ½ c milk
  • 2 tbsp butter
  • pinch cayenne pepper
  • salt as needed
  • 2 cups of uncooked elbow noodles or shells
  1. Cook noodles as directed on box
  2. Keep 1 cup of pasta water
  3. Combine all ingredients except pasta in a glass bowl, placing in microwave for 70 seconds
  4. Stir. Heat for additional 20 seconds or until melted. Keep stirring as this helps to melt
  5. Add a splash of pasta water if too thick
  6. Pour over pasta and stir. Enjoy
