As fall rolls in, I start to make “comfort food” meals. Except, I know my mom’s comfort food isn’t always the most healthiest of meals. Don’t get me wrong, who doesn’t love mom’s dinners? But, I am trying to show my kids that you can cut back in some areas which allows you to sometimes splurge in others. One of these healthy meals is turkey and gravy! So when #Jennie-O sent me these boneless Turkey Breast Tenderloins, I wanted to see what kind of comfort meal I could make out of extra lean turkey tenderloins.
So I started with Jennie-O’s great recipe collection for this product. Their site is quiet helpful for planning out your weekly menu. I found Roast Pepper and Turkey Stroganoff, which gave me my inspiration. My kids probably would not eat the red peppers, so I had to improvise. I ended up using a Golden Mushroom can of soup. Added additional mushrooms and then fresh spinach. It turned out great and the kids were asking for seconds. To me, that is always the proof it was good.

I love fall! Here comes the warm, feel good meals along with football and family outings. I try to be the kind of mom who feeds my family as healthy and tastefully as possible! I try not to sacrifice taste for healthy. So sometimes I have to find small ways to cut down or cut out bad stuff and increase the good stuff.
Chili is not so bad to begin with, other than the salt. “Salt is the devil”, I was once told. Bread is his sister, lol. So I came up with this recipe for a crock pot or any pot really.
You can use all your favorite (healthier or not) brands in here which will make the meal more appealing and encourage continued healthy meals. I would try to find products with lower salt content and higher fiber. Jennie-O has really been stepping up their game. They have lean ground turkey, in a variety of seasonings, that I used for this chili.

On my constant quest to make healthier fast meals on the week nights, I found Jennie-O* has been quite busy themselves. Jennie-Onow offers many healthy turkey options which are also fast for week night meals. They offer these fully cooked turkey breast or lunch meats already marninated. It can be purchased as a large piece or sliced for sandwiches. I chose the sliced sun-dried tomato turkey breast for these yummy sandwiches.
While making these fast sandwhiches, I kept thinking of more uses for the turkey breast.
These sandwhiches were simple to make. A couple slices of sun-dried turkey, one slice of provolone, a little jarred sun dried tomato pesto or roasted red peppers, and a little mayo. I put all this on sourdough bread (or the bread of your choice) and warmed it on the panini maker until the cheese was melty! I thought of adding fresh baby spinach after I had warmed them up but the kids were already asking to eat their sandwhiches, so next time!
The turkey breast could be cut up into chunks and put on skewers with fresh red pepper and cheese pieces for a spring get-together. Jennie-O offers quiet a few “The Biggest Loser” reccipes which are also yummy! #Jennieo
